PROBLEM TO BE SOLVED: To provide a method for controlling operation of an incinerator capable of appropriately controlling the amount of steam in a boiler without bringing about ill effects. SOLUTION: This method performs normal operation control of controlling the supply amount of incineration objects with incineration throughput as a controlled variable, and controlling the temperature of air with the temperature in a furnace as a controlled variable when the amount of steam is less than a first upper limit setting value A; performs a first restrained operation control and measures the continuation time of the first restrained operation control when the amount of steam exceeds the first upper limit setting value A; and performs a second restrained operation control when the continuation time exceeds a predetermined period of time, or the amount of steam exceeds a second limit setting value B. The first restrained operation control performs operation for increasing calorie recovered in an air preheater by raising the temperature of air with the amount of steam as a controlled variable, while the second restrained operation control performs operation for reducing the amount of matters to be burned, which is supplied into the furnace, by controlling incineration object supply means with the amount of steam as a controlled variable.
