PRODUCTION OF FRUCTOSYLVALINE

PROBLEM TO BE SOLVED: To provide both a method for producing fructosylvaline from a peptide or protein containing an N-end fructosylated valine and a method for determining fructosylvaline obtained by the method. SOLUTION: This method for producing fructosylvaline comprises enzymatically treating a peptide or protein containing an N-end fructosylated valine with a serine carboxypeptidase (EC3.4.16.1). This method for determining fructosylvaline comprises treating fructosylvaline obtained by the method with a ketoamine oxidase and measuring formed hydrogen peroxide.
