摘要 PURPOSE: A method of making unrefined cereal wine by mixing conventional hard-boiled rice, malted wheat and mineral water in a conventional mixing ratio is provided which produces the title rice wine having choline, methionine, folic acid, vitamin B2, B12 and protein and an effect on inhibiting fatty liver. CONSTITUTION: This process for making raw rice wine comprises the steps of preparing malted wheat by fermenting cereal powder; preparing hard-boiled rice by steaming wheat flour; mixing the obtained raw material with a specified amount of subterranean water, fermenting for a predetermined period and brewing the rice wine raw liquid using mineral water.
