PURPOSE: A preparation method of pettitoes, seasoned and cooked trotters of pig, is provided, which gives a health food of pettitoes good in outer appearance and maintains the nutriments including collagen and gelatin. CONSTITUTION: The method includes the following steps : (i) removing hairs from the trotters and washing the trotters in running water; (ii) cutting the cleared trotters to be 2-5cm in thickness; (iii) getting together the cut trotters and winding cotton thread on the gathered trotter pieces; (iv) soaking the pieces in a seasoning made from 85-90% of soy sauce diluted with water, 1-5% of smashed onion, vinegar and refined rice wine, for 3-5hr; (v) boiling meat stock wherein jujube, ginger, garlic, Schizandra chinensis BAILL., and ginseng are steeped, at about 100deg.C and cooking the seasoned trotter pieces in the stock for 20-30min; and then (vi) taking out the trotter pieces to let the steam out and putting the pieces in the stock again and boiling down at a low temperature for 10-20. |
