Microorganisms (A) able to produce delayed and large amounts of sulfite comprising a DNA construct (I) containing one or more genes (II) involved in the sulfite cycle under the control of a promoter, are new. Microorganisms (A) able to produce delayed and large amounts of sulfite comprising a DNA construct (I) containing one or more genes (II) involved in the sulfite cycle under the control of a promoter, are new. The high sulfite concentration appears at a late stage of substrate utilization, in the stationary growth phase, in the last third of the exponential growth phase or at a cell density of 60-90% of that achieved in the growth phase. Independent claims are also included for (I) and producing (A) by incorporation of (I).
