PROBLEM TO BE SOLVED: To obtain a soluble polymerized gelatin having safe edibility, low viscosity and improved workability in processing and useful for foods, pharmaceuticals, etc. by reacting a solution containing a prescribed amount of gelatin with a solution containing a prescribed amount of a polyphenol to effect the crosslinking of the gelatin. SOLUTION: A solution containing 1-15 wt.% gelatin is made to react with a solution containing 0.1-2.0 wt.% polyphenol such as proanthocyanidin e.g. at pH 4-8 and 40-80 deg.C to form crosslinks and obtain a soluble polymerized gelatin. Preferably, the formulation ratio of the polyphenol (solid) to the gelatin (solid) is >=0.1 wt.% and the solubility of the soluble polymerized gelatin is adjusted by adjusting the period to keep the gelatin at 40-60 deg.C and relative humidity of 50-80%.
