PURPOSE: A preparing method of noodles using heat-treated leek paste having abundant nutrients with excellent pharmacological effects is provided to serve a noodle product with a unique flavor of the leek without spoilage during a storage period. CONSTITUTION: The method of making noodles containing leek comprises the following steps : (i) cutting cleared fresh leek into a size of 3-5cm and heat treating in boiled water for 1min ; (ii) making leek paste by pulverizing the slightly boiled leek with a colloid mill with refined water twice the quantity of the leek ; (iii) kneading 100wt% of wheat flour, 35wt% of the leek paste, 3.6wt% of activated gluten, 5.0wt% of salt and 0.0238wt% of DF-100 for preservation of the product together ; and then (iv) packing by sealing tightly with deoxidizer. |
