PURPOSE: A method of using a Scutellaria baicalensis Georgi extract with excellent pharmacological effects that can prevent cancer by inducing activity of Quinone reductase is provided. CONSTITUTION: The extract of Scutellaria baicalensis Georgi is added to various foods to prevent cancer. 0.1-1.0wt% of the Scutellaria baicalensis Georgi extract as an inducing substance of Quinone reductase can added to chewing gum, candies, cookies, ice cream, beverage, sausage and chocolate.
