A symbiotic microorganism comprising a combination of specified yeasts and bacteria which ferment sugar into alcohol and simultaneously oxidize the alcohol into organic acids and which can also ferment lactic acid. Procedure for recovering and preparing, using conventional procedures, symbiotic living microorganisms consisting of yeasts and bacteria comprising the propagated yeasts (H1) Brettanomyces intermedius (DSM 12690), (H2) Brettanomyces lambicus (DSM 12691), (H3) Brettanomyces lambicus (DSM 12692), (H4) Brettanomyces lambicus (DSM 12693), (H6) Zygosaccharomyces bailii (DMS 12694), (H8) Brettanomyces custersii (DSM 12695), (H9) Brettanomyces custersii (DSM 12696) and (H10) Brettanomyces lambicus (DSM 12697) and the bacteria (B1) Acetobacter spp. (DSM 12683), (B2) Lactobacillus spp. (DSM 12684), (B3) Lactobacillus spp. (DSM 12685), (B4) Acetobacter spp. (DSM 12685), (B5) Acetobacter spp. (DSM 12687), (B6) Gluconobacter spp (DSM 12688) and (B7) Acetobacter spp. (DSM 12689).
