PROBLEM TO BE SOLVED: To provide a method for producing smoked Crustacea, e.g. crab, lobster or prawn, which can be eaten anytime and anywhere, without damaging the inherent characteristics of the raw material, e.g. pleasantness to the tongue, delicate flavor and taste, and high-quality feeling. SOLUTION: This method for producing smoked Crustacea comprises steps of drying the surface of the raw material, and smoking it at least until the meat turns white. The smoked Crustacea is produced by the above method. |
