Edge conditioning of the pieces of meat is carried out inside freezer compartments (11) located very close to one or more cutting and packaging lines (3). A method for processing cut pieces of meat comprises conditioning the cut meat using a temperature treatment, in order to get the pieces into a desired condition for processing on the slicing and packaging lines. The cut pieces are laid on trays and subjected to a base conditioning step at a first temperature, in which the pieces all reach the same temperature, and then the pieces are subjected trolley by trolley to an edge conditioning step at a second temperature lower than the first one, until the outer edges of the pieces are frozen hard. Edge conditioning is carried out inside freezer compartments located very close to one or more cutting and packaging lines, and designed to quickly cool the pieces on the trolley using circulating cold air.
