A vat apparatus for the cooking of foodstuffs by using cooking fluids like water, oil or molten fat, has a valve-controlled drainage device from the bottom region of the vat apparatus. The drainage device located in the bottom region (3) of the vat apparatus (2) is equipped with a valve system (5), motorized to open and close it. A control circuit (8) that can be subjected to control criteria is connected with the valve motor in control- technical fashion. A sensor (10) to detect the temperature state of the cooking fluid is arranged and assigned to the control circuit of the valve motor (7) so that an opening of the valve is only enabled with a specified temperature range.
