PROCESSING METHOD ON THE FREEZE-DRIED FLESH OF MOLLUSCA WITH EXELLENT REHYDRATION

PURPOSE: A method for producing a lyophilized mollusk having a good restoring force is provided to preserve its own flavor and cellular texture and to provide the economical efficiency by restoring the lyophilized mollusk in hot/boiling water with a range of 30 seconds to 6 minutes. CONSTITUTION: A mollusk is moistened. The moistened mollusk is heated during 25 to 45 minutes under the pressure and temperature of 1.8-20Kgf/cm2 and 115-121°C, respectively. The moistened mollusk is divided into an extract and a cellular texture thereof. The cellular texture of the moistened mollusk is lyophilized. The cellular texture is mixed with a various ingredients. The block-type lyophilized mollusk is produced with a good restoring force in case that it is soaked in hot/boiling water.
