PROBLEM TO BE SOLVED: To provide a method for producing a starch rice cracker enabling to bake to a light potato chip-like starch cracker having a thin thickness and a light texture. SOLUTION: This method for producing a starch rice cracker is characterized by pressing a dough composed of a bean-curd refuse-like starch as a main raw material and deaerating, and compressing the resultant compressed dough between heating plates 16 and 16' to be a thin sheet-like state, and dough having no distance between starch particles by previously pressing is used, then collision of particles can be reduced in baking.
