PROBLEM TO BE SOLVED: To obtain a carbohydrate decomposing enzyme inhibitor which is economical and shows excellent thermostability by including a heated product of wheat bran as an active ingredient. SOLUTION: The objective heated product is obtained, for example, by initially adding water to wheat bran, heating the mixture at a suitable temperature, washing the obtained product under stirring preferably at about 60 deg.C for more than 1 hour to remove water-soluble proteins and oligosaccharides, carrying out solid-liquid separation by filtration, centrifugal separation, wet classification or the like, preferably in addition, acting amylolytic enzyme to remove starch, then carrying out solid-liquid separation, heating the resultant solid at 80-150 deg.C for 3-120 min under an acidic condition (e.g. pH 1-4 or the like), neutralizing and finally carrying out solid-liquid separation. The above inhibitor contains anα-amylase inhibitory substance having high inhibitory activity against salivary amylase or pancreatic amylase and anα-glucosidase inhibitory substance inhibiting sucrase or maltase and is effective for the prevention and treatment of diseases, e.g. obesty, diabetes and the like, because the digestion of carbohydrates is inhibited by the both substances.
