POLYSACCHARIDES FOOD MATERIAL PROMOTING CALCIUM ABSORPTION AND THEIR MANUFACTURE

PROBLEM TO BE SOLVED: To provide a food material having calcium absorption promoting effect obtained by introducing a phosphate group into water-soluble polysaccharides, and their manufacturing method. SOLUTION: The water-soluble phosphate of polysaccharides are obtained by reacting an inorganic phosphate and the water-soluble polysaccharides after dissolving in water and boiling, under an alkaline condition. The water-soluble phosphate of polysaccharides inhibit the formation of precipitation of calcium salt in test tube, and promote absorption of calcium in intestinal tract.
