PROBLEM TO BE SOLVED: To provide mustard-containing walleye pollack including citron added a flavor of citron and its producing method. SOLUTION: A grated citron obtained by grating the seedcase of citron with a grater is mixed with a refined sake obtained by heating and removing a volatile component and cooling, then the resultant refined sake including citron is coated on a mustard walleye pollack, thus cooled in a refrigerator and malted to produce the objective mustard walleye pollack including citron added a flavor of citron. |
