PROBLEM TO BE SOLVED: To obtain a handing similar to a kitchen knives having a double-edged structure and a single-edged structure and improve convenience for using by constituting from an edge body and a handle body and continuously forming a thin edge part approximately as thin as that of a 'Santoku' (generalpurpose) kitchen knife or the like and a broad edge part approximately as broad as that of a broad-bladed kitchen knife or the like. SOLUTION: An edge body 1 is composed of a metal such as a stainless steel, a steel or the like, and in this case a handle body 2 is composed of two halves of wood, plastic or the like. The handle body 2 is arranged on a base of the edge body 1 so as to catch it, and fixed by fixing pins 3 such as rivets or the like. A thin edge part 4 approximately as thin as that of a 'Santoku' kitchen knife or the like and a broad edge part 5 approximately as broad as that of a broad-bladed kitchen knife or the like are formed on the edge body 1 through a border part E between a thin edge area K and a broad edge area M. Therefore, a handling similar to a 'Santoku' kitchen knife having a double-edged structure can be obtained by the thin edge part 4, and a handling similar to a broad-bladed kitchen knife having a single-edged structure can be obtained by the broad edge part 5, and a handling similar to two kitchen knives of a double-edged structure and a single-edged structure can be obtained by one kitchen knife.
