PROBLEM TO BE SOLVED: To provide a method for manufacturing noodles having ruggedness on surface excellent in spreading of noodle sauce and free from sticking each other in boiling time. SOLUTION: In this method comprising following process; forming dough 7 by adding salt water to flour 5 and mixing, forming the dough 7 to noodle belt 11 after mixing, aging the noodle belt, or directly pressing to form thin belt without aging, cutting the noodle belt with a cutting blade to form noodle lines 30, forming noodle 1 by cutting the noodle lines into the required length, a process forming ruggednesses 2 and 3 on the surface of the noodle 1 is installed. |
