Gas is fed into the space (11) below the mixing blade (2) so that it can rise as bubbles through the product. Additional gas is introduced through a perforated tube (9) supplied through line (8). Should this cooling be insufficient additional liquid nitrogen can be sprayed on top of the product through nozzles (6) fed from supply line (4). The amount of gas used and the size of the bubbles produced is controlled to meet requirements and the process is not confined to the use of nitrogen. The vessel can be evacuated to remove any admixed gas from the product.
