PROBLEM TO BE SOLVED: To provide a discoloration-preventing agent which is harmless, even when added to a meat food, and which can inhibit the discoloration of the meat food as much as possible. SOLUTION: This agent for preventing the discoloration of a meat food contains a peptide obtained by treating an edible protein with a protease, especially the peptide having a molecular weight of <=3,000. The preferable peptide includes milk peptide, corn peptide, soybean peptide, albumen peptide and fish peptide. The milk peptide is preferably a peptide obtained by treating milk protein with a protease, extracting the treated product with an aqueous alcohol solution, subjecting the extract to a solid liquid separation treatment and subsequently separating the milk peptide from the supernatant. |
