PROBLEM TO BE SOLVED: To provide a production process for immobilized glucose isomerase that can effectively suppress the activity reduction of the enzyme during the drying process. SOLUTION: The production process for glucose isomerase comprises the step wherein the cell bodies producing glucose isomerase are immobilized, the step wherein the immobilized cells are soaked in a saccharide solution and the step wherein the soaked cell bodies are dried. The concentration of the saccharide solution ranges from 10 to 55 in Brix and the solution contains glucose, maltose, sorbitol or soluble starch.
