摘要 PROBLEM TO BE SOLVED: To provide a method for highly economically producing a tasty and functionally good soybean milk (functional soybean curd refuse milk) without causing any waste so as to advantageously utilize a bean waste (soybean curd refuse) destined to be thrown out in the manufacturing process of soybean food e.g. soybean curd or soybean milk excellent as a vegetable food. SOLUTION: This method comprises: adding a water and vegetable issue- decomposing enzyme to a soybean curd refuse produced in the process of a soybean food e.g. soybean milk or soybean curd; and subjecting it to enzymatic reaction while applying a mechanically pulverizing treatment to thereto, thus obtaining a functional soybean curd refuse containing a lot of dietary fiber. It is preferable to apply a vegetable issue-decomposing enzymatic reaction and add a protein crosslinking enzyme for its reaction. The soybean milk is pref. added to and mixed with the obtained functional soybean curd refuse milk. It is possible to apply the similar enzymatic reaction and mechanical pulverizing treatment to a water-immersed and crushed soybean or boiled and crushed soybean in place of the soybean curd refuse.
