PROBLEM TO BE SOLVED: To obtain the subject enzyme useful for the investigation of the structure and function of a glycoprotein glucide by culturing a microorganism belonging to the genus Aureobacterium and collecting endo-α-N-acetylgalactosaminidase from the cultured product. SOLUTION: The endo-α-N-acetylgalactosaminidase useful, e.g. for the investigation of the structure and function of a glycoprotein glucide is produced by culturing a microorganism belonging to the genus Aureobacterium [e.g. Aureobacterium L101 (FERM P-16163)] and collecting the produced enzyme from the cultivation product. The enzyme breaks the GalNAc-Ser (ThR) bond by acting on the mucin sugar chain of a glycoprotein glucide, separates a glycoprotein, sugar peptide, aci-allophezin and aci-allomucin having the structure of Galβ1-3GalNAcα1-Ser(Thr) and has a molecular weight of about 166,000 (SDS electrophoresis), an optimum pH of 6.5-7.0 and an optimum temperature of 55 deg.C.
