PROBLEM TO BE SOLVED: To provide a method for producing a health food containing a healthful component such as organic acid extracted from the seeds of Japanese apricot in a high concentration esp. a health foot having a low content of salt and easily applicable to such as subsidiary foods. SOLUTION: This method comprises subjecting the salted seeds of Japanese apricot to solid-liquid separation, desalting the thus obtained vinegar from the Japanese apricot by a dialysis, e.g., electrodialysis, evaporating a water from the resultant vinegar low in salt content at 0.1 to 0.6 atm. at a distilling temperature of 75 to 100 deg.C, and obtaining a concentrated product in the form of sol. |
