System for extracting beverages in a barrel consisting of an assembly formed by a vacuum, membrane, piston or other type of pump, consisting of an expansion chamber equipped with inlet and outlet valves, controlled by an automatic system which governs its starting and stopping as a function of the outlet pressure, which absorbs the liquid stored inside a barrel in order, next, in the second stage of the pumping cycle, to propel it towards the beverage-dispensing tap, passing firstly via a heat exchanger in order to cool the beverage before it is served. If it is pneumatic, the aforesaid vacuum pump will have a supply compressor associated with it. The present system has an advantage over traditional systems in that it dispenses with the use of gases such as carbon dioxide, thereby eliminating the problems of alteration of the taste of the beverage and resulting in a more ecological system. <IMAGE>
