Knife blade which comprises a cutting edge provided with a recessed part of undulating profile and it extends from the handle to the tip of the blade. The recessed part of the cutting edge consists of a plurality of thick segments and thin segments. The thick segments are intended to press against the sides of an incision made in the surface to be cut so that the segments and the surface to be cut together form a plurality of spaces for accommodating air or fluid in order to prevent the sides of the incision in the surface to be cut adhering to each other or sticking to the sides of the cutting edge. <IMAGE>
