摘要 PROBLEM TO BE SOLVED: To provide an oil and fat composition for rice cooking capable of giving excellent loosening ability and gloss to cooking rice granules without giving an incompatible taste. SOLUTION: This oil and fat composition for rice cooking is composed of (A) 90-99.5% wt.% of edible oil and fat and (B) 0.5-10 wt.% of a mixture of saccharine fatty esters and sorbitol fatty esters and/or glycerol fatty esters. In the oil and fat composition, an HLB value of the saccharine fatty esters is <=2 and a main fatty acid of the sorbitol fatty esters is oleic acid or linolic acid, and a main fatty acid of the glycerol fatty esters is also oleic acid or linolic acid, and the component B is composed of 25-75 wt.% of saccharine fatty esters and 75-25 wt.% of sorbitol fatty esters and/or glycerol fatty esters.
