The genes for a cell wall lytic enzyme from Streptomyces, and a precursor thereof have been isolated (Nucleotide Sequences Nos 2 and 1 herein). The genes have been incorporated into plasmids and the plasmids used to transform an E. coli (FERM BP-6166) expression of which makes the enzyme available on an industrial scale. The enzyme is useful in the food industry.
