PROBLEM TO BE SOLVED: To provide a noodle making apparatus enabling the production of noodle, etc., with improved productivity without lowering its quality by adjusting the space between pressure rollers so that tension is generated in noodle strip so as to slightly open cut face. SOLUTION: This noodle making apparatus comprises a noodle strip-cutting means such as cutting blade 43, etc., which is placed in the middle of the upper and lower pressure rollers and cuts noodle strips, a noodle-detecting sensor for detecting the front ends of noodle lines, a driving means for driving the noodle strip-cutting means based on detected signals of the noodle-detecting means, a signal-generating member for controlling the driving means so as to cut noodle lines at constant lengths, and a timer which receives the signals from the signal-generating member, and actuates the driving means after a predetermined time. The spaces between pressure rollers 14a and 14b, and 15a and 15b are adjusted to generate tension in the noodle strip so as to slightly open the cut face when the noodle strip W is cut. Further, it is preferable to store noodle dough in a storage section 20b under specified conditions. |
