摘要 PROBLEM TO BE SOLVED: To prevent the deterioration and the taste loss of a squeezed soup made of fruits and vegetables of raw materials without damaging the flesh feeling of the fruits and vegetables by treating the squeezed soup under high pressure under specific conditions. SOLUTION: A squeezed soup made of fruits and vegetables as raw materials is intermittently treated two or more times under high pressure. Preferably the high pressure treatment is started as soon as possible after the squeezing. The pressure of the high pressure treatment is commonly 100-800 Mpa, preferably about 200-400 Mpa.
