Preparation of cooked meats comprises: (i) mincing, triturating and mixing meats, fats and additives to obtain a meat mass; (ii) stuffing the mass into a plastic sausage-skin; (iii) introducing to a metal mould, heat-treating to obtain a cooked, sterilised product; and (iv) wrapping the product in a flexible multi-layer laminate formed of: (a) internal layer of food-grade plastic material in contact with the product; (b) intermediate layer of aluminium laminate; and (c) external layer of paper or plastic.
