Process to recover liquid from a foam arising from especially a wine

A process to recover liquid from foam which is generated during fermentation: (a) the foam is surrendered through an inlet to a vessel in which the foam bubbles are broken down and destroyed by mechanical action; and (b) the resulting liquid is discharged from the vessel through a down-pipe in which gases are released, and the liquid recovered. Also claimed are (i) a suitable assembly in which the mechanical break-down of foam is effected by a roller whose surface bears a multitude of prods or pricks, or a flailing wheel, with a variable-speed pneumatic or electrical drive; and (ii) alternatively, the foam may be destroyed by air jets or tubes with spring-operated closures which open when internal pressure exceeds a given value.
