PROBLEM TO BE SOLVED: To produce a safe coated nucleic acid-based seasoning preparation composition having high phosphatase stability and a high content of effective nucleic acids without adversely affecting a delicate appearance and flavor of a food. SOLUTION: This composition is a nucleic acid-based seasoning preparation composition in which bivalent salts of a 5'-ribonucleotide are coated with a polycation or a polyanion. The composition is produced by forming a coacervate from the bivalent salts of the 5'-ribonucleotide as a core substance and a thermally coagulable protein and polysaccharides as a film substance according to a complex coacervation method, then heating the resultant suspension at 50-150 deg.C and subsequently drying the obtained coacervate substance. |
