PROBLEM TO BE SOLVED: To provide a method for producing a yeast essence, high in essence yield and improved in taste. SOLUTION: An aqueous suspension of an edible yeast is heat-treated at 90-95 deg.C for 30-60 minutes and is simultaneously reacted with an enzyme comprising. a lytic enzyme, nuclease, deaminase and >=1 wt.% based on dried amount of yeast of protease at 40-70 deg.C to give >=90 wt.% of the essence yield based on the dried yeast after the enzyme reaction. |
