The invention concerns a solid food bar of fresh product, characterised in that it is made up of: a shell formed by a coating obtained by moulding; a milk filling optionally overrun in the form of an oil-in-water emulsion, with low fat content, further containing one or several sugars in amorphous form, an effective amount of a texturing and optionally swelling system, optionally one or several aromatic substances, said filling having a water strength ranging between 0.8 and 0.96, preferably not less than 0.82. The invention also concerns a method for preparing such a food bar. |
