PROBLEM TO BE SOLVED: To provide a spice useful for roux, specially curry roux, for sufficiently brewing the flavor of the spice, hardly scattering the brewed flavor and stabilizing quality by mixing raw material spices and ascorbic acid (salt) and then performing a heating processing. SOLUTION: By mixing the mixed raw material spices including two or more selected from fenugreek, coriander, cumin, pepper and turmeric and the ascorbic acid and/or the salt and then performing the heating processing under the condition that the moisture content of the raw material spices is not raised to be more than 100wt.% by a heating means selected from heating under a heat sealed state, steam heating, heating by an extruder and heating by a flat pot, the target spice is obtained. |
