PROBLEM TO BE SOLVED: To provide heat-resistant gel for keeping viscoelasticity like rice cake to be hardly dissolved and macerated even by a heating processing in the state of being immersed in water for a retort processing or the like by containing native gellane rubber and glutinous rice. SOLUTION: By containing the native gellane rubber and the glutinous rice by the ratio of 1:3-1:25 (dry solid portion weight ratio) preferably, 1:7-1:10 more preferably, this target gel is obtained. Also, for the glutinous rice, the one turned to a powder shape is preferable. |
