PROBLEM TO BE SOLVED: To obtain an additive for a thickening compsn. which thickens food to a high viscosity without gelatinizing the food and may be industrially easily produced by incorporating the native gellan gum used in the presence of polysaccharides, such as tamarind seed gum. SOLUTION: This thickening compsn. contains the native gellan gum to be used in the presence of >=1 kind or 2 kinds of the polysaccharides selected from the tamarind seed gum, angelica gum, glucomannan, xanthan gum, locust bean gum, pullulan guar gum and iotacarrageenin. The food is preferably thickened by using such additive for the thickening compsn. |
