发明名称 MANUFACTURE OF BAKED PUDDING
摘要 PROBLEM TO BE SOLVED: To obtain a titled pudding which has good appearance with an excellent burning degree, is easily spooned-up with a sufficient eating sense and is superior in preservation property by mixing a pudding base with a bubble- state object, filling the mixture in a cup, baking it and burning the bubble-state object after the bubble-state object is floated up to a surface and uniformly spreaded. SOLUTION: For example, the 60(wt.) pts. of milk, 20 whole eggs and the 20 pts. of sugar are sufficiently mixed so as to make the pudding base by heating it till 60 deg.C. Then, the 45 pts. of fresh cream, the 5 pts. of yolk, the 3.5 pts. of sugar, the 45 pts. of white, the 1 pts. of xylose, the 0.3 pts. of gelatines and the 0.2 pts. of stabilizing agent are sufficiently mixed so as to be foamed by 90-140% over-run so that the bubble-state object is obtained. Then, the bubble-state object is mixed with the pudding base by the proportion of 80-95:20-5 and a plastic cup is filled with it. After the bubble-state object is floated and uniformly spreaded on the surface of the mixture in the cup, a baking processing is executed by a continuous oven for about 60 minutes so as to cool it after baking and to seal it and, then, the target pudding is obtained.
