Polyol fatty acid polyesters having improved oxidative stability are prepared us ing the addition of an alkaline material to the synthesized crude polyol fatty acid polyesters before conducting the finishi ng of the crude. The alkaline material is added in an amount such that the finished product has a pH of from about 6.0 to about 8.5 .
