PROBLEM TO BE SOLVED: To obtain a microorganism producing hydrolases which decompose cell walls of Streptococcus mutans, i.e., a bacterium causing dental caries. SOLUTION: Cell wall hydrolases produced by Bacillus sp. YU-1005 (KCCM-10090) are separately isolated as two kinds consisting of a single molecule (YU 103) having a molecular weight of 27,000 dalton and a single molecule (YU 104) having a molecular weight of 45,000 dalton, and their optimum pH and temperature are 8.0 and 60 deg.C, respectively. The hydrolases produced by the Bacillus sp. can be used as active component of a food, a tooth paste or a medicine in the form of liquid, paste or solid. |
