PROBLEM TO BE SOLVED: To provide a MISO having a mild taste, good aroma, slow deterioration in color and a long shelf life. SOLUTION: This MISO is produced by mixing an alcohol extract liquid of garden balsam to a part of the source material. The alcohol extract liquid of garden balsam is obtd. by immersing 2 to 5 pts.wt. garden balsam in 10 pts.wt. of a soln. containing >=10% ethyl alcohol content and then separating the residue from the soln. |
