PROBLEM TO BE SOLVED: To obtain noodles which have excellent viscoelasticity and are soft, sticky and smooth and has excellent taste, flavor and texture without bad taste or bad smell by adding acid protease and glucoamylase to produce noodles. SOLUTION: Noodles are produced by adding 3000 to 40000 units of acid protease, preferably 6000 to 25000 units, and 1400 to 83000 units glucoamylase, preferably 4000 to 60000 units, more preferably 8000 to 35000 units to 1kg of a grain power such as flour, rice powder, barley power, buckwheat power, starches and soybean powder. |
