The process of extraction of natural substances from biological material by a counterflow infusion method in several stages, for example four. In every stage a solvent is left for 10 to 80 minutes to circulate through the extracted material, whereupon the solvent containing the extract is removed from the first stage and the solvent from each phase is always pumped to the transfer phase, whereas fresh solvent is led into the last phase. An ion exchanging resin is added to the solvent containing the extract at a quantity corresponding to the content of undesired ions and, while mixing, the mixture is left for 5 to 60 minutes to react. Afterwards the resin is separated from the solvent containing the extract.
