PROBLEM TO BE SOLVED: To provide a method for producing a dough for noodles, enabling to efficiently produce the noodle dough having the same quality as those of hand-made doughs in a wide raw material water content range of 35-50%, and to provide a device therefor. SOLUTION: Plural rolls are disposed in a mutually contacting state so as to form a space 6 having inscribed circles, and both the shaft ends of each of the rolls are rotatably supported. One side of the space 6 is closed with a wall, and the other side of the space is opened. A noodle dough kneaded by a conventional method is continuously rolled and kneaded in the formed roll groove, and subsequently released to discharge the kneaded product from one side. |
