<p>process and installation for cutting animal carcasses in half lengthways, comprises: (i) a carcass being hung by its back feet from an overhead conveyor; and (ii) a cutter, mounted on a chassis, introduced between the back-legs of the carcass and moved down its spine. The path of the cutter is guided by guide wheels which move inside and outside the carcass, keeping the cutter central. External guide wheels follow the spine of the carcass, and at least two pairs of wheels (38, 39) present two surfaces (381, 382) which act on the surface of the carcass keeping the ridge of the spine (25) central between them.</p> |
