Method for obtaining cooked, deep-frozen potatoes, in which potatoes are cooked and then slowly cooled so that the core temperature of the potatoes drops to 20 DEG C in over 10 minutes, and are then slowly deep-frozen, so that the core of the potatoes remains in the region of 0 DEG C for at least 20 minutes before continuing deep-freezing to a lower temperature. |
