QUALITY IMPROVING AGENT FOR PROCESSED LIVE STOCK MEAT AND PRODUCTION OF THE SAME MEAT

PROBLEM TO BE SOLVED: To obtain the subject improving agent excellent in working efficiency and capable of exhibiting a sufficient quality improving effect on a processed edible meat by dissolving or swelling curdlan with an aqueous alkali solution. SOLUTION: This quality improving agent for a live stock meat is obtained by adding curdlan into an aqueous alkali solution such as an aqueous sodium carbonate solution and agitating or heating at approximately 40 deg.C for dissolving or swelling the same. By adding the obtained mixture to a raw material for a processed edible meat and forming, the processed edible meat is obtained. It is also preferable to add a powdery composition obtained by mixing a powdery curdlan and an alkali, by dissolving or swelling with water in producing the processed edible meat.
