PROBLEM TO BE SOLVED: To suppress deterioration of an oil, to reduce occurrence of a harmful volatile substance to be evolved in change of quality by oxidation and in heating, to eliminate an oxidation smell, to improve an operation environment by preventing smoking and to lower reduction in oil qualities by bringing an oil into contact with amphibole. SOLUTION: (A) An oil such as one which is heated and is being cooked (to be concrete, salad oil, sesame oil or corn oil) is brought into contact with (B) amphibole in a shape of small granule, a massive material, a laminar material, etc., so as to scavenge or absorb a peroxide radical, hydroperoxide and other volatile substances based on active oxygen such as superoxide radical and hydrogen peroxide evolved from the component A by heating, etc., in the component B. |
